Shepherd’s Pie

1 to 2 lbs ground beef, ground turkey or ground deer meet

1- 1lb 8oz package of Simply Potatoes mashed potatoes

½ large onion chopped

¼ cup chopped green onions

1 can (15 oz) Veg-all

2 tbs all purpose flour

1 cup low sodium beef broth

½ cup egg beaters or 2 beaten eggs

1 cup shredded cheese

Preheat oven to 350ºF

Brown meat with onions.  Drain completely.  Add Veg-All, broth, and flour.  Stir until slightly thickens or 3 to 4 minutes.  Spoon into 11 by 7 baking dish which has been sprayed with non-stick spray such as Pam. 

Heat potatoes in microwave as directed for 3 minutes.  Add egg mixture and mix completely.  Spoon over meat mixture.

Bake for 25 minutes.  Remove, sprinkle cheese over potatoes and return to oven until cheese has melted.

We like to turn on the broiler and toast the cheese.
