Shells from 2 pounds raw shrimp
7 cups cold water
6 whole peppercorns
1 cup coarsely chopped onion
2 celery stalks, coarsely chopped
1 bay leaf
1 garlic clove (optional)
Put all ingredients in pot and bring to a boil (covered). Simmer for 2 hours and replenish with
water if needed. Strain. Can be tightly covered and stored in frig. for several days or for
a month or longer.
