Meat Biriyani

Ingredients:
Basmati Rice-4 cups
Goat Meat - 2 lbs
Oil & ghee-1 cup
Curd-1 cup
Lemon-1
Ginger paste-2 tbsp
Garlic paste-3 tbsp
Green chillies -12
Onions -3 (cut in lengthwise)
Soy Sauce-1 tbsp(soya sauce in India)
Tomatoes -4 -5
Chilly powder-1&1/2 tsp
Corriander powder-3 tsp
Cinnamon-8
Cardamom-10
Cloves-10
Salt to taste
Cilantro(corriander leaves) ,mint leaves(pudhina)for garnishing

Directions:
Cut Mutton in to big pieces and wash them.
Soak Rice for 1 hour.
Grind Cinnamon-5,Cardamom-5,Cloves-5 to a paste.
Cut onions, tomatoes, chillies.

In a pressure cooker, heat oil and ghee, fry cinnamon,cardamom,cloves,onions, ginger garlic paste , ground paste to golden brown color. To this add tomatoes, chillies, lemon juice,soy sauce,curd ,meat and all other powdered ingredients,salt, cilantro, mint leaves and stir for 5-10 minutes.Pressure cook this with little water for 12 minutes.
Take out all mutton pieces (meat) and measure the masala mixture. To cook 4 cups rice, 7&1/2 cups water is required. Adjust the masala mixture to get 7&1/2 cups by adding water. Bring this to boil ,add the cooked meat and the rice , stir gently till water and rice stand to a same level of height, at this stage pressure cook ( with whistle on the lid) for 15 minutes in low flame.Stir well before serving.
