HOW TO MAKE YOUR OWN HOME BREWSKI
is presented as information only.

Easy to do step by step instructions
The necessary ingredients are usually available from most markets,
and the bottle capper and caps may be found at most hardware stores.

You will also need a crock or barrel, about 10 gallon size (fermentation needs room) and a hydrometer of the type designed for brewing.
The purpose of the hydrometer is to determine when the sugar content of the mix is less than 1%.
It will float on top of the mix for about 3 or 4 days, and when it sinks you are ready to bottle the brew.

You will need a collection of empty bottles - the quart size is best.
Or you can recycle. Save your beer bottles with screw tops.
If you rinse the bottle and cap immediately when empty, you can reuse it several times.

Of course you must sterile them, everything has to be SUPER clean and sterilized.
This is one of the most important things to do.

 

To sterilize, rinse anything that will come in contact with fermenting beer, in a solution of 2 tablespoons of household bleach to 1 gallon of cold tap water. You can just dip the items in the solution and then rinse with tap water. This kills microscopic bacteria which ruin the beer.

 

Recipe

 

Ingredients:
malt - 2cups,
Sugar - 5cups,
Yeast - 1tbs,
water - 3 Gallons.

 

For a darker color add more malt.

For stronger flavor add more sugar and a smaller amount of brewer's hops.

The BEST flavor, at least to me is to use 3 cups of superfine sugar and 3 cups of brown sugar. This gives about 18% by volume - 36 proof.

 

Heat about 2 quarts of water and dissolve the malt syrup leaving out the yeast..
Add the sugar and stir until it is dissolved.
Let the mix boil for several minutes then pour into the crock or barrel and add the balance of water.
If you use hops, wrap them in cheese cloth and hang it in the mix.
After it cools to between 103° F and 70° F sprinkle the yeast on the top.
Leave sit for about 5 minutes before stirring the mix gently.
Wait about three hours and skim off foam.
Keep covered so no contaminates get into the mix.
Fermentation will start within 24 hours
Place the hydrometer in the mix and from this point on keep your eye on it. It will sink in about three days or so and you are ready to bottle.
It takes about seven days at room temperature between 68°and 85° F. and out of direct sunlight to the clear stage.

 

 

 

Bottling

 

The best way to bottle is a small syphon hose.
Try NOT to disturb the mix.
Its best with more then one person.
Slowly place the hose about one inch from the bottom and start the syphon action.
Add 2 teaspoons of white table sugar to each quart bottle to start the carbonation process.
Adding to much sugar at this point could cause the bottles to burst and to little sugar would cause flat beer.
As each bottle is filled about one inch from the top, pinch the hose to stop the flow and then release and fill the next bottles.
Hand tighten the bottle caps. Just snug is good, your not bottling an atom bomb.
KEEP the bottles at room temperature 68° to 85° F. for about 7 days to allow carbonation.

Next let them age in a cool dark place for at least 10 days. Or 30 days for better taste. The very best flavor comes after about 3 months.
Drink your beer within 4 months of bottling and store in a cool place because it is natural and not processed like store bought beer..

 

Naturally brewed beer has a yeast sediment at the bottom of the bottle. This is known as a "live" or "fresh" beer. It is only yeast, and the yeast is full of B vitamins, which is healthy for you. Don't be alarmed if you should swallow some. But if you pour it out of the bottle in a slow, continuous motion, the sediment stays at the bottom.

 

If you are smart - start another batch immediately as you will want to start drinking the first one almost immediately.

Another HOME BREW Recipe

 

You will need a 5-gallon crock,
one quart of red top malt,
2 cakes of yeast,
5 pounds of sugar
4 gallons of water.

 

First heat 2 gallons of water in the crock pot.
Next stir in the malt and 5 pounds of sugar.
When dissolved, cool down with other 2 gallons of water.
Then add 2 cakes of yeast.
Keep crock in warm place for 3 to 4 days - till foam settles
then follow the bottling proceedure from above.
