Corn Bread Mix


1 cup yellow corn meal
1 cup flour
1/4 cup sugar (optional)
4 tsp. baking powder
1/2 tsp. salt

Sift together all ingredients and store in a plastic bag, at room temperature.
Makes 1 package.

To use: Pour package of mix into a bowl. Add 1 egg, 1 cup milk, and 4 Tbsp. 
softened shortening.   Beat until smooth (about 1 minute with egg beater). 
Pour batter into a greased 8x8x2 inch baking pan.  Bake at 425 degrees for 
20-25 minutes or until knife inserted at the center comes out clean.

For muffins: Fill greased muffin cups 2/3 full with batter.  Bake at 425 degrees
for 15-20 minutes.



Granola 3 cups reg. rolled oats 1 cup shredded coconut 1 cup of any mixture of the following: shelled sunflower seeds, sesame seeds, or chopped pecans, filberts, peanuts, or cashews 3/4 cup regular wheat germ 3/4 cup chopped or slice almonds 2/3 cup brown sugar, firmly packed 1/2 cup instant nonfat dry milk 1/3 cup honey 1/4 cup vegetable oil 1 1/2 cups of any one or mix of the following: chopped dates, raisins, currants, chopped dried apricots, or chopped dried peaches Preheat oven to 325 degrees F. Grease a large 16x11x2 inch baking pan with solid shortening and set aside. Combine the first 7 ingredients in a bowl, mixing well. In a small saucepan, combine honey and oil; heat gently to dissolve honey. Pour honey mixture into the dry ingredients, stirring well to thoroughly coat and mix. Spread the mixture evenly over the baking pan and bake for 15-20 minutes or until toasted to your liking. While baking, stir with a spatula every 5 minutes. As granola cools, add the chopped dried fruit. Cool well and store at room temperature in an 11 cup airtight container.

Instant Oatmeal 3 cups quick oats Salt 6 plastic sandwich bags Put 1/2 cup oats in blender and blend at high speed until powdery. Reserve in a small bowl, then process another 1/2 cup oats. Into each bag, put 1/4 cup unchopped oats, 2 tablespoons powdered oats, and a scant 1/4 tsp. salt. Seal and store pkts. in an airtight container. To serve: empty packet in bowl and add 3/4 cups boiling water. Stir and let stand 2 minutes. Varitations:
  • Apples and Cinnamon: To each bag add 1 Tbsp. sugar, 1/4 tsp. cinnamon and 2 Tbsp. chopped dried apples.
  • Cinnamon Spice: To each bag add 1 Tbsp. sugar, 1/4 tsp. cinnamon and scant 1/8 tsp. nutmeg
  • Raisins and Brown sugar: To each bag add 1 Tbsp. brown sugar and 1 Tbsp. raisins.

    Malted Hot Cocoa Mix 25.6 ounce package nonfat dry milk powder 6 cups miniature marshmallows 16 ounce container instant chocolate milk mix (like Nestle's Quik) 13 ounce jar malted milk powder 1 cup sifted confectioners sugar 6 ounce jar non-dairy creamer (powdered) 1/2 tsp. salt In large bowl, combine all ingredients and stir until well blended. Store in an airtight container. Keep in a cool place. Makes about 20 cups or 10 gifts. To serve: In mug, pour 6 ounces of hot water over 1/3 cup cocoa mix, and stir until well blended.

    Onion Soup Mix 3 onion bouillon cubes, crushed 1 beef bouillon cube, crushed 2 tsp. cornstarch 1/3 cup instant onion flakes 2 dashes pepper Put all ingredients in a small sandwich bag. Seal well and store in cool, dry place. To use: Empty package into a pot and gradually stir in 4 cups cold water and 1 Tbsp. butter. Bring to boil, reduce heat and cover. Simmer 20 minutes. Ladle soup into oven proof bowls, sprinkle with croutons or toasted bread. Then add one slice provalone cheese. Briefly put bowls under a broiler to melt cheese. Serve. Makes 4 1-cup servings. Onion Dip: Mix one package onion soup mix with 2 cups sour cream. Chill before serving.

    
    
    Chili Seasoning Mix
    
    
    1 1/8 cups flour
    3/4 cup instant minced onion
    1/3 cup chili powder
    2 Tbsp. ground cumin
    2 Tbsp. salt
    1 1/2 Tablespoons instant minced garlic
    1 Tbsp. crushed hot red pepper flakes
    2 tsp. sugar
    
    Mix all ingredients very well. Seperate into 6 equal portions - packaging in aluminum 
    foil or another airtight package of some type.  Label.
    
    To use: Brown one pound of ground beef - drain off excess fat.  Sprinkle contents of
    one package of the mix over the beef, stirring well.  Add one 15 oz. can tomato sauce,
    1/4 cup water, and one 15 oz. can undrained kidney beans. Simmer uncovered, for at least
    20 minutes, or until the beans are cooked to your liking. Makes 4 servings
    
    This goes very well with bread and a nice salad.
    
    

    
    
    Taco Seasoning Mix
    
    
    1/4 cup instant minced onion
    3 Tbsp. chili powder
    2 Tbsp. ground cumin
    2 Tbsp. salt
    1 Tbsp. crushed hot red pepper flake
    1 Tbsp. instand minced garlic
    1 Tbsp. cornstarch
    2 tsp. oregano, crushed well
    
    Mix all ingredients well. This is supposed to make 6 packages of mix, but I store in a
    jar and use about 1/4 cup seasoning mix in my tacos. 
    
    To use: Brown 1 pound ground beef - drain off excess fat. Sprinkle one package of mix
    over beef. Mix well. Add 1/2 cup water and 1 tablespoon catsup, stir. Simmer uncovered,
    for approximately 10 minutes or until water had evaporated. Spoon into taco shells and
    top with grated cheddar cheese, chopped tomatoes, chopped lettuce, chopped onion, taco
    sauce and sour cream. This should make approximately 8 tacos.
