VARIETY RICE

Carrot Rice

Ingrdients:
Grated carrot- 3/4 cup
Basmati rice-1cup
cinnamon -4
cardamom -2
cloves-3
cilantro
onion -1
ghee - 1 tbsp
oil - 1 tbsp
salt
Chillies -5

Directions:
Cook rice and allow it to cool.
Cut onion,green chillies.In a pan pour oil and ghee,add cinnamon,cardamom,cloves,onion,chillies,grated carrot,salt and fry for 5 -7 mts.Then add the cooked rice and garnish with cilantro.

Cilantro Rice

Ingredients:
Jasmine rice - 1 cup
Cilantro (cut) - 1 cup
Clarified butter (ghee) - 1 tbsp
Oil - 1 tsp
Red chillies - 5
Grated coconut - 1 tbsp
Onion - 1 (small)
Mustard - 1 tsp
salt to taste

Directions:
Cook the rice,and allow it to cool in a plate.
In a pan add the clarified butter and oil,then add mustard and let it split for 1 minute.Cut the onion and add to it and fry well. Then add the red chillies ,the grated coconut and cilantro . Add salt to taste.Fry for 4 minutes and then add the cooked rice and keep in low flame for 5 minutes with constant stirring.

Coconut Rice

Ingredients:
Jasmine rice-1cup
Grated Coconut-1cup
Gram dhal - 1 tsp
Mustard - 1tsp
Green Pepper - 3 - 5
oil - 1 tbsp
salt

Directions: Cook rice and allow it to cool.
In a pan pour oil add gram dhal and mustard,after the mustard gets split add the grated coconut ,chopped green pepper , salt and fry for 5 -7 mts.Then add the cooked rice and leave in low flame for 5 minutes

Lime Rice

Ingredients:
Jasmine rice - 1 cup
Lime -1
Onion - 1 (small)
Mustard - 1 tsp
Red chillies -5
Urad dhal -1 tsp
Turmeric powder (Haldi) - 1/2 tsp
Salt to taste
Oil - 1 tbsp

Directions:
Cook the rice,and allow it to cool in a plate.
In a pan add oil,then add urad dhal,mustard and let it split for 1 minute.Cut the onion and add to it and fry well. Then add the red chillies. Add turmeric powder and salt to taste.Fry for 2 minutes and then add the cooked rice and stir so that turmeric powder gets mixed evenly.Atlast sprinkle lime juice in it and stir well.

Mango Rice

Ingredients:

Long grain Rice-1 cup
Grated Mango-1 cup
Green pepper 4
Chopped Onion-1/4 cup
Gram dhal-1 tsp
Peanuts-2 tbsp
Mustard-1 tsp
Curry leaves-for flavor
Salt-to taste
Oil-1 tbsp

Directions:
Cook rice and allow it to cool. In a sauce pan, heat oil, add gram dhal, peanuts and fry well. Add mustard and let it splits, then add the curry leaves, chopped onion, green pepper, salt and the grated mango. Saute this till mango is cooked. To this add the cooked rice.

Tamarind Rice

Ingredients:
Jasmine rice-1cup
Tamarind Paste - 1 tbsp
Gram dhal - 1 tsp
Mustard - 1tsp
Red Pepper - 3 - 5
oil - 2 tbsp
salt
Peanuts - 3 tbsp
Turmeric powder - 1 tsp
Methi powder - 1 tsp
Jeera powder - 1tsp

Directions:
Cook rice and allow it to cool.
Add half cup water to the tamarind paste.
In a pan pour oil add gram dhal and mustard,after the mustard gets split add the peanuts, red pepper , salt , turmeric powder,jeera powder, methi powder and fry for3 minutes. To this add the tamarind juice and bring it to boil for about 15 minutes to make it to a thick curry.Then add the cooked rice and leave in low flame for 5 minutes

Tomato Rice

Ingredients:

Jasmine rice - 1cup
Onion -1 (small)
Garlic - 4 pods
Cilantro to garnish
Tomatoes -2
Green chillies - 3 (Pepper)
Chilly powder - 1/2 tsp
Saunf - 1 tsp
Oil - 1 tbsp
Salt to taste

Directions:
Cook the rice ,and allow it to cool in a plate.
Cut the onion,garlic,tomatoes,Chillies.
In a pan add oil,then add saunf and fry for a minute.Add the onion,garlic,chillies,tomatoes. Add Chilly powder and salt to taste.Stir well till the tomatoes are tender and then add the cooked rice and keep in low flame for 5 minutes with constant stirring.Garnish with cilantro.
