Vegetable Fried Rice


Ghee Rice

Ingredients:
Basmati rice - 1 cup
ghee -1/4 cup
green chillies -3
cloves - 3
cinnamon - 2 pieces
onion -1 small size
garlic -4 pods
cilantro
water -2 cups.

Directions:
Soak rice for 1/2 an hour.Cut onion,garlic,cilantro,green chillies.
Pour ghee in the pressure cooker,add cloves cinnamon,onion,garlic,green chillies and fry for 2 mts, add water and salt.After the water gets boiled add the soaked rice and stir well,after 5 mts add the cilantro and pressure cook for 15 minutes in low flame.

Mushroom Biriyani

Ingredients:
Basmati Rice-4 cups
Mushroom- 1 to 2 lbs(16-32 oz)
Oil & ghee(melted butter)-3/4 cup
Lemon-1
Chopped Ginger -3 tsp
Garlic - 7 cloves
Green chillies -4
Onion -2(cut in lengthwise)
Soy Sauce-2 tsp(soya sauce in India)
Tomatoes -3
Chilly powder-1&1/2 tsp
Corriander powder-3 tsp
Cinnamon-3
Cardamom-3
Cloves-3
Salt to taste
Cilantro(corriander leaves) ,mint leaves(pudhina)for garnishing

Directions:
Soak rice for 1 hour.
Wash and cut Mushrooms into big pieces.
Cut onions,chillies,tomatoes.
Grind cinnamon,cardamom,cloves,ginger,garlic into a paste.

In a pressure Cooker,heat the oil and ghee,fry ground masala and the onion till golden brown. To this add all other ingredients, mushrooms and stir for 10 minutes. Add 7 cups water and allow it to boil, add the soaked rice and stir,when rice level and water level are the same, pressure cook(with whistle on it)in low flame for 15 minutes.Serve with Onion curd chutney

Vegetable Fried Rice

Ingredients:

Basmati rice -1 cup
Water -2 cups
garlic - 7 pods
ginger paste-1tbsp
onion -1 (medium size)
Green chillies -3
carrot,beans, (cut into small pieces)-1 cup
oil-1/4 cup
salt -req.
soy sauce - 2 tsp.
Aginomotto-1/4 tsp(Available in chinese stores)

Directions:
Cook rice ,allow it to cool for 20 minutes in a plate.
Grind garlic and chillies.Cut onion.
Pour oil in a pan,add ginger paste,ground garlic and chillies and fry for 2 mts.,add onion and fry for a minute.Then add vegetables,soy sauce,aginomotto,salt and fry for 5 mts.Add the cooked rice,garnish with cilantro.Serve with Chicken tikka masala or peas masala.
