Chicken Fried Rice

Ingredients:

Basmati Rice-2 cups
Chicken - 2 thigh pieces
Vegetables-1 cup(carrot,beans,capsicum cut in lengthwise)
Ginger paste-1 tbsp
Garlic paste-1 tbsp
Green chillies Paste-1 tbsp
Onion -1 (cut in lengthwise)
Soy Sauce-1 tbsp(soya sauce in India)
Tomato Sauce-1 tbsp
Chilly sauce-1/2 tsp
Lime juice- 2 tsp
Ghee & oil -1/2 cup
Salt to taste
Cilantro (corriander leaves)for garnishing

Directions:

Cook the chicken pieces with salt. Cut them in to thin strips using knife and fork.
Soak rice for 1 hour and cook with little oil and 4 cups water. Allow it to cool by itself.
In a sauce pan, heat oil and ghee, add chopped onion followed by ginger,garlic, chillies paste and fry for 5 minutes. To this add the vegetables followed by soy sauce,chilly sauce,lime juice,tomato sauce,salt and stir well till the vegetables are cooked. To this add the cooked rice and stir , add the chicken pieces and garnish with cilantro.Serve withTomato Chicken and Onion Curd Chutney
