Chicken Biriyani

Ingredients:

Basmati Rice-4 cups
Chicken - 2 lbs
Oil & ghee-1 cup
Curd-1 cup
Lemon-1
Ginger paste-2 tbsp
Garlic paste-3 tbsp
Green chillies -12
Onion -3 (cut in lengthwise)
Soy Sauce-1 tbsp(soya sauce in India)
Tomatoes -4 -5
Chilly powder-1&1/2 tsp
Corriander powder-3 tsp
Cinnamon-8
Cardamom-10
Cloves-10
Salt to taste
Cilantro(corriander leaves) ,mint leaves(pudhina)for garnishing

Directions:

Soak rice for 1 hour.
Cut Chicken into big pieces and wash.
Cut onions,chillies,tomatoes.
Grind cinnamon-3,cardamom-5,cloves-5 into a paste.

In a pressure Cooker,heat the oil and ghee,fry cinnamon-5,cardamom-5,cloves-5 and the onion till golden brown. To this add all other ingredients, chicken and stir for 10 minutes. Pressure cook for about 4 minutes. After 10-15 minutes take out all the chicken pieces and measure the masala mixture left in the cooker.To cook 4 cups rice 7&1/2 cups water is required,so add water to masala if it is less than 7&1/2 cups and vice versa. Bring this mixture to boil ,add the chicken and the soaked rice and stir gently. Bring it to boil till water and rice are in same level of height. At this stage pressure cook(whistle on the lid) for 15 minutes in a low flame. Serve withOnion Curd Chutney
