Makes 4 servings
Season the cod fillets with the pepper. Put the fish in a heavy skillet. Add the remaining ingredients over fish in order. Bring to a boil over high heat, reduce the heat to med-low, cover and simmer gently for about 10 minutes. Remove the fish carefully, keep warm. Reduce the cooking liquid by 1/2 over med-high heat. Stirring often. Correct the seasoning by adding more pepper and salt to taste. Turn off heat, swirl in 1 Tbsp. butter and pour sauce over fish. Serve at once.
Great served with a rice dish and a green vegetable.
