70 - Betaceos Varronis- Varronian Beets
Varro beets that is black ones of which the roots must be cleaned well, cook them with mead and a little salt and oil. Boil them down in this liquor so that the roots are saturated therby; the liquid itself is good drinking. It is also nice to cook a chicken with them.

Beets-
I peel and slice 1 or 2 beets. Put them in a pan and cover with mead, around 1.5 cups. Then add a pinch of salt and a couple of tablespoons of olive oil. Boil until done. I sometimes add a pinch of cumin as well. I have not yet cooked a chicken in this but it sounds interesting.
