Grammar appetizer
What verbs are used in the recipes? List them in your copybook under the categories below and provide a translation. You may want to use Word Reference on your computer.

Recipe 1

Shred or cube cheese; melt in pan with garlic, 1/2 cup wine, and kirsch (on the stove). Stir often. Add more wine if the cheese seems too dry as it's melting. When cheese is melted, add a little potato-starch-water mixture to thicken. Add pepper to taste. Transfer
the pan to a special burner, and eat fast! Stir as each bread cube is dunked (stir with the bread), to prevent cheese from clumping.
One should not drink cold beverages with cheese fondue, or your stomach will be sorry. She says white wine or tea is best, and
warm-ish Coke or mineral water is OK. NEVER drink beer !

Recipe 2
Dice 4 oz bacon. Fry the bacon together with a finely chopped onion. Add a sliced red pepper, 5 diced tomatoes and 3 diced potatoes (don’t let it brown).Add 4 cups fish stock. Flavour with salt, thyme, white pepper. Allow soup to simmer for 20 minutes.. Add 8 oz fresh clams, boil for a few minutes. Beat 1 egg together with 4 tbsp cream, add to soup and finish off with chopped parsley.

Recipe 3
The night before, soak the beans in a large bowl with water to cover at least 3-4 inches. Soak the jerked beef in water to cover. The next morning, drain the beans and place in a large pot with water to cover by at least 3 inches. Bring the beans to a boil in medium heat.

Meanwhile, cut the beef into 1-inch pieces. Cut the sausage into 1-inch pieces. (When I use the Portuguese sausage I usually prick it with a fork and simmer it for ten minutes in enough water to cover; then I cut it.) Cut the ribs into 2-rib sections.

Add the beef, sausage, ribs and bay leaves to the beans. Simmer for about 2 hours or until soft (Goya brand black beans usually take about 2 hours) , stirring from time to time, adding water as necessary to keep beans covered. Keep an eye on the beans so they don't burn at the bottom!

Chop the onion and garlic. Heat the olive oil in a cast iron skillet over medium heat. Add the onion and garlic and cook until golden brown. Add two ladlefuls of beans and mash them. Put this back into the pot. It will thicken and season the beans.

Continue to simmer gently for at least another hour, adding water as necessary. A good feijoada should have a creamy consistency when done. Remove the bay leaves. Some people take the meats out at this point and serve them separately on a platter. I like to leave them in with the beans, it keeps them hot.

Recipe 4
Slice a bun into two , place in it sliced tomato, onion, lettuce, dressing and a grilled or fried round cake of minced beef.

Recipe 5
Fry meat in butter (beat should be cut in thin strips) until tender; salt and pepper it. Fry onions until tender. Return meat to skillet. Add tomatoes or ketchup. Cook 5 minutes. Add evaporated milk or light cream. Stir in mushrooms last. Serve with rice (see index for fluffy rice).

Recipe 6
Make a dough using 1 cup water, fresh yeast, 2 tbsp oil, a pinch of salt and 4 cups of flour. Allow to rise.
Using a rolling-pin, roll out dough into large, round disc. Spread tomato paste, basil and chopped onions onto dough. Add bacon, mushrooms, olives, and grated cheese. Finally, sprinkle over with tarragon, thyme and basil. Place in middle of oven for 15 minutes at highest temperature. Enjoy!

Recipe 7
Peel 3 egg-plants and slice them into 1 inch slices. Fry up in frying pan quickly on both sides in a little oil. Make a meat sauce, from minced beef, 1 can of tomatoes, 1 chopped onion, garlic, salt, pepper and basil. Allow to simmer for a few minutes.Now make a cheese sauce, using butter, flour, milk, cheese, salt and pepper.Butter deep pan. Layer the egg-plants, meat sauce and cheese sauce., ending with the cheese sauce. Sprinkle grated cheese on top. Cook in oven for 20 minutes at 300F. Serve with salad.
