SAMPLE RECIPE From:

AVOCADO MOUSSE

For 8

1 tablespoon unflavored gelatin softened in

2 tablespoons cold water

3 ounces lime gelatin

2 cups hot water

1 cup mashed ripe avocado

1/2 cup mayonnaise mixed with

1/2 cup heavy cream, whipped

Dissolve gelatin mixture and lime gelatin in hot water; when partially congealed stir in remaining ingredients. Pour into a mold greased with mayonnaise and allow to set in refrigerator. Unmold on crisp, dark green salad greens. I usually use this with fresh fruits and it’s beautiful!
