SAMPLE RECIPE From:

HONEY APPLES

Wash 6 small to medium-sized Jonathan or other good baking apples and peel them about halfway down, leaving the lower portion of each apple unpeeled. Remove the core almost to the bottom, keeping the blossom end intact. Fill the centers of the apples with the following mixture:

1/4 cup honey

1/4 cup coarsely chopped almonds

1 teaspoon Angostura Bitters

2 tablespoons softened butter

6-to-8 tablespoons brown sugar

[Preheat your oven to 350° F. Press 1 rounded tablespoon of brown sugar over the top of each filled apple.] Place the apples in a shallow pan, pour a small amount of water around them and bake uncovered for approximately 45 minutes, or until the apples are soft when pierced with a toothpick. Serve warm with a bit of the sweet juice they were cooked in—and for the daring, plain cream to pour over them.
