Pie Crust Cookies
makes: as many as you want

Mmmm..cookies.. These are super easy and they taste just like some ooey gooey Greek cookie.

1 frozen pie crust, thawed

butter

honey

finely crushed walnuts, approx. 1/4 cup.

cinnamon + sugar

preheat oven to around 375-400º F.

Roll out the pie crust onto a no-stick cookie sheet, and cut into any desired shape.  I like mine in little circles in the convenient size of a napkin ring.  Take the extra dough, roll it up and squish it into little circles too.

Spread each cookie with a little dab of softened butter.

Sprinkle each cookie with some walnuts.

Top the walnuts with a blob of honey.  It doesn't need to be spread as it will melt all over when it cooks.

Over the honey sprinkle some cinnamon and sugar mixture.

Bake for 10-12 minutes.  They should be golden brown, but its hard to tell under all the melted honey.  You can make them crispy if you bake them longer, or less for chewy cookies.  

Some honey will inevitably melt onto the cookie sheet, glueing your cookies to the no-stick sheet.  When you first remove them they will still be bubbling, I recommend waiting just a little bit and take them off the sheet while they are still hot, before the honey cools and sets.  Place them on a wire rack to cool so they don't then get glued to the plate.
