Oriental Stir-Fry
serves 2 people

Ahh, the ever versatile stir-fry.  I probably don't need to point out that any of the vegetables can be altered to your preference.  You can also use the cheap ramen noodles instead of soba, I just use soba because they are more nutritious with fewer refined carbohydrates.  (For all you dieters who care.)

1 Portabella mushroom, stem removed, halved and sliced thin

4 shiitake mushrooms, stems removed, (or white mushrooms),  sliced

1/4 of a red or yellow bell pepper, sliced thin

1/4 to 1/2 of a whole zucchini, sliced

1/2 cup bean sprouts

handful of snow peas

4 oz. of Tempeh, sliced, or regular extra firm tofu

2 tbls. olive oil

2 tbls. fresh ginger, peeled and grated

1 tbls. minced garlic

approx. 3 tbls. Soy sauce, or to taste.

1 tbls. Sesame seeds, toasted (optional)

 Add the oil to a large stir fry pan or wok, and turn to coat.  Heat the oil to medium-high heat, then add the ginger and garlic.  

When the ginger and garlic begins to sizzle, add the mushrooms and tempeh or tofu.  Stir  and cook for 30 seconds.

Add the snow peas and sprouts.  Push the mushrooms and tofu up the sides of the wok, cooking the rest in the middle.

Next, add the zucchini and bell pepper.  Stir and cook until the mushrooms are mostly, but not completely done, probably about 1-2 minutes.  They should still be a little firm.  

.  Add the soy sauce and sesame seeds.   Continue to cook and stir for a minute or so, until the mushrooms are soft and juicy and the veggies are tender-crisp.  Serve hot with rice or noodles.

note: to toast sesame seeds, add to a dry pan at medium heat, stirring, until golden brown.  

no/low oil version: Use a large non-stick wok, or one sprayed lightly with low-fat spray.  Heat the pan, then add all ingredients except sauce.  Quickly pour in about 3/4-1 cup water and cover the pot.  Allow to steam for almost a minute, then stir quickly, replacing cover.  When veggies are tender crisp, remove cover and add soy sauce, stirring over heat to mix.  

Stir Fry with Soba noodles

Prepare stir fry as above, plus two servings worth of Soba or ramen Noodles.  You can prepare the noodles ahead of time, or as you cook the stir fry.  If you boil the water when you heat the oil, they should be done exactly on time.

In a small pot, bring several cups of water to a boil.  Add the Soba noodles.  Boil over medium heat, stirring, until done.  It should only take a minute. Drain the noodles.

After the stir fry vegetables are all cooked, add the drained soba noodles, plus a little additional soy sauce.  Stir and cook to heat  the noodles.

If using soft tofu in the stir fry, remove it before adding noodles to avoid it being broken up, then add it on top to serve.
