POTATO PANCAKES

[BULVINIAI BLYNAI]

 

 

Ingredients

7 Potatoes, medium
1 Large Onion, diced
3 Eggs (fork beaten)
½ tsp Salt
Dash Pepper
4 Tbsp Flour
1 tsp Lemon juice
Oil for frying (Peanut, olive oil, lard or vegetable)

Preparation:

Peel and grate potatoes, drain excess water.
Fry onion in oil, medium high heat, till brown around the edges and turning transparant.
Cool fried onion then add, potatoes, eggs, salt, pepper and flour.
Mix until consistency of thick batter.
Add 1/8 to ¼ cup of milk if too thick, beat until mixture looks like a waffle batter.
Add 1 tsp of lemon juice last.
Fry in vegetable, peanut, olive oil or lard, until golden brown on both sides.
Drain on paper towels.
Serve with sour cream.
